KAI Corporation which manufactures Kershaw cutlery has been Japan s premier blade producer for over 90 years. But that s just recent history. Prior to that Seki City where KAI s factories are located was the site of samurai sword production. The blade smiths of Seki City have been crafting fine cutlery for more than 700 years and many of KAI s craftsmen are indeed descendants of samurai swordsmiths. These fine knives are forged of VG-10 super steel which is composed of carbon chromium cobalt manganese molybdenum silicon and vanadium. The Pakkawood handles are manufactured by impregnating hardwood veneers with phenolic thermosetting resins and fusing them into a solid wood-grained structure which provides moisture-resistance stability and strength. The Shun Pro line features the one-sided beveled edge design with a hollow-ground back preferred by Japanese chefs. The single bevel design offers an incredibly sharp edge that is easy to maintain while the hollow-ground back cretes an air pocket between the blade and the food being cut. This results in less friction damage to the food and less sticking. The deba knife is the Japanese tool of choice for cutting vegetables fruit and raw meat.
