Note the undulating tapered blade and sharp tip. The boning knife is designed to slip easily around joints in between bones to pierce skin and so on. In the tiny town of Thiers France Sabatier knives are still crafted using the process originally developed by Bonnett Sabatier back in 1834. Every Sabatier knife is carefully hot-drop forged from a single piece of surgical grade steel then tempered to provide it with both flexibility and hardness. Finally each blade is then taper ground by master craftsmen until the strongest sharpest cutting edge is achieved. Three heavy-duty rivets secure the handle to the full tang and then a special high grade polymer is molded over the tang and rivets. Next this is hand ground to the exact shape of the handle.
